So, yes. This is the week for Royal Corona beans. Really, that’s what they’re called. They’re really great beans that have a right-now-unfortunate name. Recipe courtesy the great John Dimatos!
Ingredients
- 300g Rancho Gordo Royal Corona beans (or a Greek gigante)
- 300g crushed tomatoes
- 300g cherry tomato, halved
- one onion, diced
- 3-4 cloves garlic, minced
- 1 tsp. oregano
- 1/2 tsp. red pepper flakes
- salt
- black pepper
- olive oil
- bay leaf

Procedure
- Soak beans overnight, then cover with 2″ of water (including soaking water), olive oil, and bay leaf
- Bring to a boil for 5 minutes, then lower to a simmer and cook until softening, and add salt
- While beans are cooking, in an oven-safe pan or Dutch oven, heat olive oil over medium, then add onion and garlic
- Cook onion and garlic until softening, then add crushed tomatoes, oregano, red pepper flakes, salt, pepper
- Preheat oven to 350F
- Cook tomato until it reduces its liquid, and when beans are ready, add them to the pot and stir to combine.
- Top with sliced cherry tomatoes, and put in the oven. Cook for one hour.
- Serve warm, with a nice crusty bread!
