Year of the Bean: Why?

As 2018 headed towards 2019, I knew I wanted to eat more vegetables – for health, environmental, ethical reasons. But I didn’t want to wear a hair-shirt about it – I wanted to be excited, and eager to explore new foods! So I resolved: I’ll cook a different bean every week. I didn’t quite get there in 2019 but did pretty well. Now I made a blog about it for 2020, so I HAVE to. It’s 2020, Year of the Bean!
