Versatile and simple, lentils are a great legume to have around. They cook up quick and can be used across a whole host of dishes – on their own, in soups, grain salads, or formed into patties for great veggie burgers
Ingredients
- 250g French-style Green Lentils, rinsed
- one medium onion, sliced thin
- one tablespoon kosher salt
- one bay leaf
- olive oil
Procedure
- Heat olive oil in heavy-bottomed pan on medium heat
- Add onion and sauteé until it is well-browned, 20-25 minutes
- Add lentils, salt, and bay leaf; mix until all are coated
- Cover with 2″ water, and raise to a boil on high heat
- Cook until lentils begin to soften and water is absorbed, 20-25 minutes
- Enjoy on their own, or in all kinds of combinations! I had a great salad of pearled barley, preserved lemon, roast carrots, and these lentils several times through the week.
