Week Five: French Green Lentils

Lentils cookin’!

Versatile and simple, lentils are a great legume to have around. They cook up quick and can be used across a whole host of dishes – on their own, in soups, grain salads, or formed into patties for great veggie burgers

Ingredients

  • 250g French-style Green Lentils, rinsed
  • one medium onion, sliced thin
  • one tablespoon kosher salt
  • one bay leaf
  • olive oil

Procedure

  1. Heat olive oil in heavy-bottomed pan on medium heat
  2. Add onion and sauteé until it is well-browned, 20-25 minutes
  3. Add lentils, salt, and bay leaf; mix until all are coated
  4. Cover with 2″ water, and raise to a boil on high heat
  5. Cook until lentils begin to soften and water is absorbed, 20-25 minutes
  6. Enjoy on their own, or in all kinds of combinations! I had a great salad of pearled barley, preserved lemon, roast carrots, and these lentils several times through the week.
