Ingredients
- 200 g Rancho Gordo Super Lucky 2020 Black-eyed peas, soaked overnight
- One onion, chopped small
- 275 g collard green kimchi, per Wild Fermentation recipe, chopped roughly
- Bacon fat
- Bay leaf
- Fresh black pepper
- Salt
Procedure
- In a large heavy-bottomed pot, heat bacon fat; add chopped onion and black pepper to taste, and sauté until onion begins to brown
- Add bay leaf and peas, including soaking water, and raise to a hard boil
- Boil at high for five (5) minutes; lower to simmer, and simmer until peas are soft, adding water if necessary
- Add salt only when peas are soft; continue to simmer until little liquid remains
- Add collards, and cook together until all ingredients are combined
- Serve hot with cornbread and/or rice!
